Goan Pork Sausage Pickle
The Goan sausage or choris is a typical reflection of Indo-Portuguese cuisine. The painstaking process starts with large chunks of boneless farm pork that is sliced or chopped and heavily salted. The chopped meat is allowed to dry in the sun for two to three days after which it is matured for at least a week with a mixture of aromatic spices, ground hot chilies, homemade vinegar and finished with cashew feni - a local liquor brew, and finally sun dried in casings. We bring to you the bottled version (without casings) which can be made into a delicious choris pulao, pan fried or relished as a simple onion chili fry with steamed white rice or pao bread……a treat you will thoroughly enjoy and treasure!!!!
